Lunch Time Fun

So today my little girl is gone with her dad to watch a football match, the poor child won’t know what’s going on but I am all for daddy daughter bonding. While they are out of the house I wanted to try get the place organised. And first on my list is feeding myself. Unfortunately the fridge isn’t exactly abundant at the moment (note item 2 on list “do some friggin’ groceries”). So I decided to make a “whatever was in the fridge” soup.

I always start soup with onions and garlic. Some people don’t like it but I am a garlic fiend so wouldn’t be without it. I like to think it will help me ward of colds and things. This soup is also full of speed for anyone who is doing slimming world. Today’s random recipe is below.

Ingredients.
1 brown onion
1 clove of garlic
2 carrots
1/2 turnip
1 potato
1 sweet potato
1 tbsp soya sauce
1 pint chicken stock (I use knorr stock pots)
Salt and pepper to taste.

Method:
1. Cut the onion into a small dice and crush the garlic. Sweat off in a non stick pan or if using a regular pan then use some frylite. 
2. Peel and chop all the other veg and put it in the pan. Make up 1 pint of stock as per the instructions and add it to the pan.
3. Bring to the boil and then simmer for about 20 minutes or until the veg is tender.
4. Blitz using a stick blender or in a regular blender.

Honestly though you can throw anything into this soup and it has never failed me. It was perfect for lunch today and tomorrow.  And freezes well if you have a ton left over. Now I’m off to make a shopping list and hope tomorrow will be just as productive. The perfect excuse for a Starbucks if ever I heard it. 🙂
